<p><strong>How to Grill Chicken</strong></p>
<p>Probably the hardest meat to do on the grill, as it is so easy to under cook or over cook. Everyday people get food poisoning from under cooked chicken. Then on the other hand to prevent this you over cook it and have dry saw dust like meat.</p>
<p>Following a few simple steps will ensure your chicken gets cooked properly and come out succulent off the bone tender.</p>
<p>Many people pre-cook their chicken to prevent any food poisoning from occuring. You can do this by boiling your chicken pieces or pre-cooking them in the oven. Once you become more confident with chicken and use these techniques you will prepare your chicken using only your barbecue.</p>
<p><strong>Boiling Chicken</strong></p>
<p>The easiest way to prepare your chicken, simple boiling it for a few minutes to pre-cook the meat then finishing it off on the barbecue. The problem with using this method is you do get cooked chicken but it is not that tasty.</p>
<p>Only the outer layer of the chicken has flavour once you get past that the taste is dull. Although it is the easiest method to use it is my least favourite.</p>
<p><strong>Pre-cooking using the Oven</strong></p>
<p>This method involves marinating the chicken then pre-cook it in the oven. Once the chicken turns to a lovely golden brown colour place it on the grill.</p>
<p>By grilling the chicken after cooking it in the oven you give it a great smoky taste. This method is more tastier than the boiling option but still is not as good as full on barbecue chicken.</p>
<p><strong>Barbecue Chicken</strong></p>
<p>The more challenging option but difinitely the most tasty. The whole chicken gets a lovely barbecue flavour and the outer skin gets caramelized.</p>
<p>Use direct heat grilling for smaller cuts and indirect heat grilling for bigger pices or whole chickens.</p>
<p>Once you know how to BBQ chicken this method will be easier.</p>
<p><strong>Chicken &#8211; Direct grilling</strong></p>
<p>When chicken cooks the fat seaps through, which causes flare ups. When grilling chicken it is important to avoid flare ups at all costs, it is the easiest way to burn it.</p>
<p>Keep a water spray bottle handy to put up any flare ups that might occur. You can even remove the outer skin of your chicken pieces to prevent excess fat dripping through the grill grid.</p>
<p>Always smear olive oil or cook &amp; spray on the grill grid to prevent the chicken from sticking. Turn chicken pieces over frequently to prevent it from burning. Coat the chicken with marinate every two minutes, this prevents the chicken from drying out.</p>
<p>To barbecue chicken using direct heat, marinate your chicken as per normal with your favourite marinate and spices. Pre-heat your grill to a medium heat and place the chicken on. Turn the pieces over every minute. Normally chicken is done when it has a brownish colour. Make sure it is cook through by do a test slicing through one of the pieces. There shouldn&#8217;t be any &#8216;pink colouring&#8217;.</p>
<p><strong>Chicken In-Direct Grilling</strong></p>

<p><strong>Ingredients</strong></p>
<p> 2 lemon grass stalks<br /> 3 fresh green chiles, seeded and chopped<br /> 2 garlic cloves, chopped<br /> 3 scallions, chopped<br /> 1 handful cilantro leaves<br /> 1/2 tsp ground cumin<br /> 1/2 tsp ground white pepper<br /> 1/2 tsp turmeric<br /> 1 tsp ground coriander<br /> grated zest 1 lime<br /> 3 tbsp fresh lime juice<br /> 2 tsp grated fresh ginger root<br /> 1 tbsp fish sauce<br /> 1/2 cup (120ml) coconut milk<br /> 4 boneless, skinless chicken breast halves, butterflied<br /> salt, black pepper<br /> 1 recipe fresh papaya sambal (see Sauces), optional</p>
<p><strong>Method</strong></p>
<p>Butterfly the chicken breasts; with one hand on the breast half to hold it in place, slice through the middle horizontally to cut almost in half. Open out flat.</p>
<p>Remove and discard the tough outer skin from the lemon grass stalks and roughly chop. Put lemon grass, chilles, garlic, scallion, cilantro, cumin, pepper, turmeric, ground goriander, lime zest, lime juice, ginger, fish <br />sauce and coconut milk in food processor or blender; pulse until smooth.</p>
<p>In a bowl, toss chicken with lemon grass mixture.</p>
<p>Cover and refrigerate for 1 hour. Grill according to instructions below. Sprinkle with salt and pepper. Serve hot with fresh papaya sambal, optional.</p>
<p><strong>Outdoor on the barbecue</strong><br />Grill over medium-hot coals until the chicken is opaque, with no trace of pink, 3 minutes per side.</p>
<p>Indoor<br />Preheat broiler. Broil until the chicken is opaque, with no trace of pink, 3 minutes per side.</p>
<p><strong>Think ahead</strong><br />Make marinade up to 3 days in advance. Cover and refrigerate. Marinade chicken up to 4 hours in advance. Cover and refrigerate.</p>

<p><strong>Barbecue Chicken Tenderness Tips</strong></p>
<p>Avoid freezing whenever possible to eliminate additional moisture loss during thawing, which results in less tender meat.</p>
<p>Keep chicken from drying out in the refrigerator by keeping it tightly wrapped. If the chicken dries out, it will become tough.</p>
<p>Leaving the skin on the chicken, when cooking it, helps to hold in juices, which increases tenderness.</p>
<p>To keep breast area of chicken from drying out during roasting, place a piece of foil over this area. Remove during last 30 minutes of roasting time to allow the skin to brown properly.</p>

<p>Whether prepared in whole or in part, it is recommended to keep the skin on the chicken while baking to prevent the meat from drying and burning.  The skin helps maximize taste and can be removed before serving.  For those who choose to leave the skin out entirely, baking chicken in sauce or as part of a casserole is a great way to serve a more juicy and tasteful entrée. There is a range of sauces and seasonings used to prepare truly mouthwatering chicken recipes.      </p>
<p>Follow this expert tip for getting the most taste out of your baked chicken dishes: once the dish is prepared for baking, place the contents in an oven bag to preserve flavor throughout the cooking process.  Your guests will taste the difference.  An alternative is to place individual pieces of chicken in aluminum foil, along with sauce and seasonings.  The foil should be folded in a way that would prevent the sauce from escaping.  Arrange the foil-wrapped chicken pieces on a baking dish or tray and bake in a preheated 375 degree oven.   Most recipes for chicken require a baking time of 30 minutes to one and a half hours. </p>
