Those experts that know how to use a smoker can prepare a very tasty meal for their friends and family. The meal prepared by those that know how to use a smoker will have a very different taste from a meal cooked in more traditional methods. A smoker is a device that uses different types of wood, and each of these types of wood yields a distinctive flavor to the food prepared. A smoker uses mesquite, oak or hickory rather than charcoal.

Other hard woods can also be used by those who know how to use a smoker. The choice of wood is usually left up to the cook. The first step in using a smoker is to set the apparatus up in an appropriate spot. Then a fire is built in the bottom of the two barrels in a typical smoker. The wood should be heated for approximately an hour until the wood pieces are very hot. The wood should be heated just right to obtain a perfect flavor to the food. Those who know how to use a smoker will have to check the wood as the condition of the burning coals and the appropriate temperature of the coals is important. Experts will add extra wood to keep the wood burning nicely.

A Smoker Helps a Good Cook Prepare Great Meals

Those with perfect knowledge of how to use a smoker realize that they should tend to the temperature of the wood constantly. The heat in a smoker needs to be checked over the hours that the food is in the smoking process. There should be a thermometer in place to assist the cook with keeping an appropriate temperature for an excellent taste. Those who know how to use a smoker adjust the flues and dampers of the smoker to make sure that the smoking process is perfect throughout.

The combination of a cook and a smoker can produce a unique meal for a hungry group of friends and family. Two different pieces of meat can be prepared at the same time by those who know how to use a smoker. Some good cooks will do a suckling pig or a turkey in a smoker. Other dishes such as chili can also be prepared for a large number of people in a good smoker. Learning how to use a smoker will provide for great entertaining with delicious food.

Great American barbecue isn’t easy in Bangkok but there’s one place where you can count on it and that’s at Roadhouse Barbecue, located on the corner of Surawong and Rama IV Roads. This three-story restaurant/bar is home to great American food including barbecue specialties like barbecued ribs, pulled pork sandwiches, barbecued chicken and many more that represent true American barbecue at its best. There’s also a large selection of American favorites from burgers and steaks to soups and sandwiches.

But the real stars of the menu here are the barbecued specialties starting with ribs smoked with mesquite wood – imported from the U.S. – and including chicken smoked with hickory wood, pork for pulled pork sandwiches and even salmon smoked with apple wood. You can get a half or full rack of ribs or a chicken and ribs combo dish, all of which are served with potatoes and cole slaw made from an old North Carolina recipe.

And although the barbecue gets the most attention, they actually serve more burgers here than anything else. You can get yours with three different kinds of cheese as well as toppings like grilled onions, smoked bacon, sauteed mushrooms and grilled peppers. Another big favorite is the Buffalo Wings which are on special every Monday night when you can get 20 wings for the price of 10 (170 baht).

As for more American food, the menu also contains sandwiches such as a Philly cheese steak, a “Texas-style” beef brisket sandwich, a chipotle pulled pork sandwich, a three-cheese grilled cheese and tomato, a BLT with apple-smoked bacon, a fish sandwich, a grilled sausage sandwich with pepper and onions. Well, you get the idea. They cover a lot of bases here.

They’re also very proud of their chili and they should be since it won an award in a stateside competition a while back sanctioned by the Chili Appreciation Society International. In addition to the chili pot here there are also a number of soup pots simmering all the time and they’re full of roasted red Pepper and tomato soup, black bean soup and a real New England seafood chowder.

There are a lot of other menu items here including steaks, seafood, some pastas and even a great grilled pork chop. It’s not all about food here, though. First, there’s Thailand’s largest selection of draft beers which also happen to be the coldest in Bangkok according to a magazine poll last year.

Next, there’s live entertainment almost every night downstairs after the dinner hour. On the second floor is another dining room that can be used for private functions or parties. And finally, on the third floor is Roadhouse’s version of a sports bar with plenty of TV screens and lots of games to play including foosball, video golf and soccer and pool on an authentic Brunswick championship table.

So there are a lot of reasons to visit Roadhouse Barbecue and while the barbecue may be the most publicized of the attractions here don’t forget about everything else, especially the great service and friendly atmosphere.

Chicken on a beer can? You bet! When Steven Raichlen, America’s barbecue guru, says it’s the best grilled chicken he’s ever tasted, cooks stop and listen. An essential addition to every grill jockey’s library, Beer-Can Chicken presents 75 must-try beer-can variations and other offbeat recipes for the grill. Recipes such as Saigon Chicken with Lacquered Skin and Spicy Peanut Sauce, Root Beer Game Hens, Beer-Can Turkey (uses the 32-ounce Foster’s), Stoned Chicken (it’s grilled under a brick), Dirty Steak, Fish on a Board (Salmon with Brown Sugar Glaze), Mussels Eclade-grilled under pine needles, Grilled Eggs, Wacky Rumaki, Rotisseried Garlic Rolls-even Grilled Yellow Pepper Soup will have your mouth-watering. Whether on a can, on a stick, under a brick, in a leaf, on a plank, or in the embers, each grilling technique is explained in easy-to-follow steps, with recipes that guarantee no matter how crazy the technique, the results are always outstanding. So pop a cold one and have fun.Steven Raichlen’s Beer-Can Chicken tells everything one should ever need to know about roasting a chicken upright on top of a can of beer. For those who find that premise strange or silly (Raichlen, in fact, thanks his publisher for being “wacky enough” to produce the book), the author describes beer-can chicken as “the perfect bird, crackly crisp, succulent within … the most flavorful chicken you’ve ever tasted.”Raichlen’s goal is to encourage grillers to have fun and use their imagination, and he presents 74 “offbeat recipes” as starting points. Notable selections include Beer-Can Turkey, which requires a giant 32-ounce can of Foster’s to do the job; Welder’s Chicken, a stewing hen wrapped in aluminum foil and turned with welder’s gloves; Dirty Steaks, cooked right on the coals; and Diabolical Chicken, soaked with spicy French mustard and which Raichlen makes “whenever I’m short on time or fancy ingredients but want to impress the hell out of my guests.” There are also recipes for “beerless birds” (Ginger Ale Chicken, Black Cherry Soda Chicken), side dishes, and desserts, as well as info on grilling techniques and equipment.A chicken straddling a beer can, at the very least, makes a great conversation piece at an outdoor beer bash. Raichlen’s most helpful hint? Make sure the beer can is open before putting it on the grill. –Andy Boynton

Dual fuel is the most common choice, providing the versatility of multi-functional electric cooking and the quick reaction of gas burners. All electric is an excellent option if no mains gas is laid on. However, you may also want to consider LPG – some manufacturers will adapt a range cooker for LPG and this saves you the hassle of arranging this yourself.

Once you have decided on your style of range cooker, chosen your color (stainless steel is most popular) and opted for either a dual fuel or all-electric model, there are a number of other features to look out for.

Useful features include:

Electronic programmers – ideal for those of you with hectic lifestyles, these allow you to programmed start and/or finish cooking times. If time is really of the essence in your kitchen, look out for special features such as fast pre-heat which ensures less time is spent waiting for the oven to reach perfect cooking temperatures.

Oven size – especially secondary ovens can be relatively small. It may be worth going for at least a 100cm cooker instead of 90cm as the larger width will mainly benefit the second oven. You can also login to www.tailgatting-recipes.com. Beware that some 100cm cookers have a relatively small secondary oven.

Stay clean liners or catalytic liners – these will help you to keep your oven interior in pristine condition! Look out for replaceable liners as they may need to be changed after several years of heavy usage.

Triple glazing – this will ensure the cooker doors remain cool when cooking (a must-have for families with small children).

Individual pan supports – these are easier to clean under the tap than large pan supports.

Triple ring burners – these are very useful for large saucepans, frying pans and woks. Depending on your cooking style, you may prefer to have two triple ring burners rather than one.

Separate grill compartments – great if you love your grills. However, many cookers have a grill in one or two of the ovens. A grill in a multi-functional oven will provide you with the possibility of fan assisted grilling, which is more suitable for grilling chops, sausages and mixed grills. Fan grills reduce spitting and splashing which makes for a clean oven and also reduces the number of times you have to turn or baste. These grills are usually used with the door closed which offers great safety to both cooks and their children – plus very even cooking. Some ovens will also feature a rotisserie and this provides a great way to cook succulent pork, chicken, duck and game birds.

Griddle features – can serve as barbecues, frying pans and woks. The Chef Top is made of pure thick stainless steel and has remarkable heat storage capabilities. It is also durable and easy to clean.

Telescopic trays – these roll out the shelf or grill to help eliminate unnecessary lifting or reaching over when handling heavy dishes from your Range Cooker.

“A” efficiency rating – watch out for ovens that carry this rating (this is important for both ovens on double oven models).

The most popular manufacturers in the UK at the moment are as follows:

Britannia: As the leading range cooker specialist, Britannia offers a variety of models unmatched in the market. Britannia offers a selection of classic and contemporary range cookers, ideal for any lifestyle, designed to make cooking a perfect pleasure.
We all have heard about barbecuing, but we are unaware of the real tricks in it. Barbecuing is also a form of art. To a person who is new to this art may get confused, because cooking meat in an open fire is a really tricky method. In order to get a really good and delicious bbq dish, one must have a lot of patience.Barbecuing can be done in two methods: through grilling and smoking. Grilling is the quickest method of cooking meat over a direct source of dry heat, whereas, smoking is a slow process, where the food is kept at a particular distance from the fire. Now let us take the two separately, to know the real processing.

BBQ Grilling

Grilling is of two types: direct and indirect. But before going into the details, let me tell you that there are three varieties of grills: charcoal grill, gas grill and electric grill. Charcoal grills are relatively inexpensive when compared to the other two. Now we’ll go back to the types of cooking. Direct method is a high heat method and is used for cooking relatively small pieces of food. Steaks, chops, chicken breasts, etc are some of the typical foods that can be grilled directly. In indirect method, as the name suggests, the food is kept to the side of the heat source. It is somewhat like baking a cake or such type of foods. Now we will move on to smoking.

BBQ Smoking

Smoking is the finest way to cook food, even though it takes time. If grilling is best for cooking smaller pieces, smoking is best for cooking larger pieces. Roasts, ham, ribs, brisket, etc are some of the foods that can be smoked. One must maintain a steady temperature, to come up with a deliciously smoked food. The normal, suited temperature for smoking is between 200-225 degrees. If you cook the meat until it’s 165 degrees in the middle, it would make the meat more tastier,as the smoke flavour gets deep into it.For basic bbq smoking, you can use the regular grill. The only thing that one must be aware while smoking is, the selection of right type of wood.Because, each wood is different in its own way. So we have to experiment with all sorts of wood to find out which one is the best. Smokers may vary in shapes and sizes. There are smokers running in gas and charcoal. But the heat coming from any type of smoker is a cooler one, which is why it takes a lot of time to smoke.

Now to end with it, barbecuing has to undergo one more process, that’s topping it with sauce. In fact it is the topmost ingredient, which one can’t omit while barbecuing.Types of sauce varies according to the region. If vinegar-base sauce is typical in Southern United States, tomato-base sauce is typical in Western United States. The best time to apply sauce is during the last stage of cooking. ie, when you are sure that the meat is well cooked, because, sugar is one of the main ingredients in barbecue sauces and it tends to burn easily. So you must cook the meat before you burn the sugar.

No matter where you live in the world, if you like to barbeque, you probably have a wonderful recipe for whatever you like to cook. There are many tools to this particular trade. First of all, you need the kind of meat that everyone knows you can cook well. You also need the right utensils to make this food worth cooking. You need a great recipe – with the right kinds of sauces and the right amounts of time preparing, as well as the right seasonings. Most of all, though, you need the right place to cook it. This is where barbeque smokers come into play.

What Are They?

When you are dealing with cooking meat on a barbeque, barbeque smokers are the best ways to go. They might look like ordinary grills, but they most certainly are not. barbeque smokers give you the freedom of grilling out, and grilling to taste, as well as the enjoyment of eating food you have prepared yourself. But the preparation is the key. With barbeque smokers, instead of being grilled, your food is smoked to perfection.

This is an excellent way to prepare food of any sort. With barbeque smokers, you can baste and prepare your meats and vegetables to your liking, and you can put them in the barbeque smokers for any amount of time, until they are finished and ready to eat.

Advantages

There are some schools of thought that say that smoking your food with barbeque smokers make its more healthy. In deed, they are cooked in such a way that the fat doesn’t acquire quite so much as over an open flame. Also, the food will have a rich and smoked taste to it with barbeque smokers.

While you might have to wait a little bit longer for your food, using barbeque smokers and other smokers is really going to enhance the overall flavor and quality of the food that you are cooking. And, when it comes to grilling out and cooking for our families, isn’t that what is the most important? Even if it takes a bit longer, the food is going to come out with a very distinct and interesting flavor. This smoked flavor is what makes barbeque smokers so popular. The taste of meat and vegetables cooked with smokers is so much different from that of the food grilled that many people will buy a grill as well as a smoker so that they can continue to prepare many different meals with many different types of food for their families.

Come on over and we’ll throw some steaks on the grill…often a summertime conversation amongst friends.

Well, what steaks are the best, you ask? We have tested these beayties and bring you our opinion.

Here we have the 8 best steaks for grilling this summer. These steaks are a cut above the rest, and will not let you down when prepared correctly.

1. The Ribeye. A juicy, tender flavorful cut. there is generous marbling through out, and is a crowd pleaser. This cut, when left on the bone is what is known as the “prime rib” at most restaurants.

2. The Tenderloin. As the name suggests, this is the most tender of the cuts. Also known as the “Filet Mignon”, it truly does melt in your mouth.

3. Flat Iron. Now here is a unknown secret, and probably is the second most tender of all the choices. A low budget choice that takes a good steak rub well.

4. Top Sirloin. Excellent choice for kabobs.

5. Tri-Tip. Flavorful, juicy and perfect for marinades. Slice it thin after preparing and the flavor bursts in your mouth.

6. Flank Steak. The perfect choice for “teriyaki”. Marinate, grill, slice thin on an angle…they will be asking for more.

7. Porterhouse. Also known as the T-Bone, because the bone forms a “T” where the shell steak and the tenderloin flank each other. This is the “powerhouse” of all steaks. A man’s meal.

8. Last, but not least The Strip Steak. My favorite of them all. I grill this year round. It is also known as the NY Strip, Top Loin Strip, Kansas City Strip. The steak has real character, flavor and is by far fabulous on the grill.

There you have a list of 8 wonderful choices for grilling this season. Remember to check which cut you are purchasing and check the grading carefully. beef is graded in three most common categories:

1) Select, the lowest grade…not much flavor, tougher to chew.

2)Choice, a much better grade than select. Some marbeling in the cuts, lots of flavor.

3)Prime…clearly a cut above. Lots of marbling, loaded with flavor, my favorite selection when I am cooking or ordering at a restaurant a Strip Steak or a T Bone.

All other cuts you can stick with choice, and personally i stay away from select, as it is not worth the calories.

Enjoy and happy grilling.

Moving into a new home inevitably brings unexpected expenses. First time home owners, who are starting from scratch, can be in for a big surprise, there are so many things they need to set up house. Maybe you’re planning on buying a house-warming gift, but you’re not sure what to choose. Here is a handy list of ideas to help kick-start your gift giving plans.

For the outdoors:

- Collection of small garden tools and a garden kneeling stool.

- Sprinkler

- Flowering plant with a trellis.

- Book on gardening and plant types.

- Badminton or volleyball set

- Bocce balls.

- Barbecue implements and a BBQ cookbook.

- Personalized welcome mats are a great gift. They come in all sizes, colors, textures, and can have themes that reflect your friend’s interests.

For the kitchen:

- An electric wine cooler can be had for about $80 at Home Depot and for a wine lover makes a great gift.

- A collection of wines and a gift pack of cheeses, or a pottery wine cooler.

- An assortment of cleaning products, pail, mop, broom, and dustpan is not fancy, but something they will need.

- For the baker, they may appreciate a bread maker and cookbook.

- The aspiring gourmet may appreciate, a cookbook and a specialty rack for hanging pots, or a filled spice rack.

Miscellaneous:

- A print or piece of artwork that you know they will appreciate. You may also want to have a picture of the couple framed for their new home.

- For the holiday season, a personalized tree ornament or decoration for the home to start their collection makes a memorable gift.

- A gift certificate to the local hardware store, Home Depot or decorating store is something they are sure to use.

- A set of screwdrivers, pliers, hammers and other basic tools along with a home fix-it book is a gift they will use over and over.

- A small fireproof safe or lockbox is something a new homeowner would never think of purchasing, but will be thrilled to receive.

Group Gifts

Sometimes if you know a new homeowner needs a large item, it’s better to combine your resources with other friends or family members and purchase one big gift. Here are some ideas for those types of giving.

- Lawn mowers are a necessity that most homeowners don’t think about until the lawn is ready to be cut. Any sort of landscaping tools such as hedge trimmers, weed-eaters, a wheel barrow, or a collection of shovels (including a snow shovel), rake, hoe, and other garden implements are welcomed gift ideas.

- Barbeque Grills are a much needed item that will be welcomed when the nice weather approaches. – Storage shed for garden tools or waste cans.

- Vacuum cleaner or carpet cleaner is a useful gift, especially if you have an idea of what the homeowner is looking for.

- A kitchen appliance such as a food processor or a set of pots and pans.

Before deciding on a gift, make sure the new homeowner doesn’t already have the item and that the color or theme fits. You don’t want your gift to be an item destined for a garage sale, but rather a useful gift that creates a fond memory whenever used.
